AMBI (Tarrytown, N.Y.) announced that in vitro tests show that conversion of sugar to acid by plaque bacteria is blocked by nisin, a peptide the company sells as a food preservative in 40 countries.
The peptide, classed by the FDA as "generally recognized as safe" (GRAS), will be tested in people beginning early in 1996. ...
